Granola Coconut Oil Energy Bites
These granola bites are perfect as a snack or a quick breakfast on the go! Don't forget to make with your favorite Nana Joes Granola blend, like Organic Cashew Butter and Peach Cluster Blend.
Ingredients:
- 1 ½ cups of granola (use your favorite oat or paleo variety of Nana Joes Granola)
- ½ cup of almond butter or any nut butter
- ¼ cup of coconut oil, melted
- ¼ cup of maple syrup or honey for sweeter
- ½ cup of chocolate chips or dried fruits (optional)
- 1 tsp of vanilla extract
- A pinch of Jacobsen sea salt
Instructions:

Melt the coconut oil: In a small saucepan, gently heat the coconut oil until it’s fully melted.

Mix the ingredients: In a large mixing bowl, combine the granola, nut butter, honey (or maple syrup), vanilla extract, and a pinch of sea salt. Stir in the melted coconut oil and mix until all the ingredients are well incorporated.

Add mix-ins (optional): If you’re using chocolate chips, dried fruits, or nuts, fold them into the mixture at this point.

Shape the bites: Using a spoon or your hands, form the mixture into small, bite-sized balls. Place them on a baking sheet lined with parchment paper.

Chill: Place the energy bites in the fridge for about 20-30 minutes, or until they’ve hardened.

Enjoy: Store the bites in an airtight container in the fridge for up to a week, or freeze them for longer storage.
