Ingredients:

  • 1 medium butternut squash, peeled & cubed
  • 2 tbsp olive oil
  • 1 cup vegetable broth
  • Salt to taste
  • Paleo Orange Almond Butter Granola
  • Fresh herbs of your choice (rosemary & thyme)

Instructions:

  1. Preheat oven to 425°F (220°C).
  2. Roast peeled and cubed squash on a baking sheet for 45 mins or until tender.
  3. Scoop flesh into a blender; add olive oil and vegetable broth. Blend until smooth.
  4. Season with salt; adjust thickness with more broth if needed.
